A cot tent with some sort of apron would be great. If the legs were covered, your stuff would be dry underneath the bed.

This is my solution, packed and unpacked. My chair sits the other side in the same way as the tent (yellow bag), so I can open the seat and get to the fuel filler without taking half my kit off.

Go single seat and then you can carry tonnes without having to remove back seat gear
